Peel and dice carrots, parsnips, sweet potatoes and red onion.

Combine olive oil, optional apple cider vinegar, rosemary, garlic and salt.

Add the root vegetables to the air fryer basket and drizzle over the rosemary oil. Then spread into an even layer (use tongs).

Air fry the root vegetables for 15-20 minutes, until they have some browning. Cook longer for more browning to taste.
