Combine flour, baking powder and salt in a large bowl.

In a different bowl, add together the egg yolk, non-dairy milk and maple syrup.

Mix together diced apple with the wet and dry ingredients and stir briefly to combine.

Heat coconut oil in a skillet then drop in small handfuls of fritter batter. Use a spatula to press into a fritter shape and cook for 4-5 minutes each side until golden brown.
