Wash the bok choy / pak choi and snap off the leaves. Dice the leaves and stem.

Peel and dice cucumber and dice the celery.

Combine sesame oil, extra virgin olive oil, sesame seeds, brown sugar, apple cider vinegar and salt to make the sesame dressing.

Crush pistachios and dry toast in your skillet. Set aside to cool.
