It's so easy to make this butternut squash quinoa bowl as a tasty gluten free lunch idea - it's full of color and flavor!

Scatter butternut squash cubes on a baking sheet, drizzle with olive oil and sprinkle on paprika and thyme. Toss to coat and roast for 15 minutes.

Add diced broccoli florets and red bell pepper to the sheet, drizzle with oil and roast vegetables for about 20 minutes.

Cook quinoa to packet instructions. Combine tahini, water and thyme and whisk to a dressing.

Combine the cooked quinoa and roasted vegetables, then drizzle on the tahini dressing and any toppings you like!
