An easy to make butternut squash pasta bake that's so tasty! Enjoy this vegetarian comfort food dinner with all the family.

Fry onion and spices

Fry onion, garlic and spices in a little olive oil. Cook the pasta to packet instructions.

Add vegetables

Add butternut squash and bell pepper, and pour in vegetable stock. Bring to a boil, reduce the heat and stir through coconut milk. Cook for 15 minutes.

Blend the sauce

Blend the butternut squash mixture to a thick sauce, adding a touch of water if needed.

Assemble the pasta bake

Pour a third of the sauce into your dish, then tip in the cooked pasta.

Bake the pasta bake!

Dot the cheese into the bake, and pour in the rest of the sauce. Bake for 15 minutes covered, then 10-12 minutes uncovered.
