Chicken with blueberry sauce

This blueberry chicken combines sweet fruit with fennel and a touch of maple syrup for a flavourful baked chicken dish that is dairy-free and gluten free

Ingredients Chicken breasts Blueberries Fennel Onion and garlic Olive oil Thyme Maple syrup Apple cider vinegar

Season chicken and fry until browned, then set aside

Fry onion and fennel until softened

Add blueberries, maple syrup, vinegar and salt & pepper

Heat until it forms a thick sauce

Add chicken to an ovenproof dish and pour over the sauce. Bake for 20 minutes

Recipe tips Ensure the chicken has an internal temperature of 165F Use frozen blueberries if out of fresh!
