These pesto chicken quinoa bowls are perfect for a high protein dinner or fancy lunch! Simple to make and full of flavor.

If you're making your own pesto, combine ingredients and blend!

Dice the red bell pepper, zucchini and broccoli, drizzle with olive oil and sprinkle over Italian seasoning. Place on one side of a baking sheet.

Place chicken breasts on the baking sheet, drizzle with olive oil and paprika. Bake with the vegetables for 20 minutes, or until the chicken reaches 165F using a meat thermometer.

While the chicken and vegetables are in the oven, cook the quinoa to package instructions. Fluff up the grains with a fork.

Mix together the quinoa, vegetables and pesto. Slice the chicken breast and place on top. Drizzle with pesto sauce.
