Clean the beets and slice off the tops and tails. Wrap in foil and roast in the oven.

Once the beets have cooled, slice with a sharp knife.

Dry toast (without oil) pepitas in a skillet.

Make the dressing with extra virgin olive oil, apple cider vinegar, fresh grated ginger, maple syrup, salt and black pepper.

Combine the English cucumber, beets, herbs, seeds and dressing to serve.
