Serve up these garlic ginger Brussels sprouts as a fun vegetable side dish for Christmas dinner or holiday celebrations!

Combine olive oil, grated ginger, garlic, apple cider vinegar, salt and black pepper.

Trim the ends of the sprouts, and remove any tough outer leaves.

Add the Brussels sprouts to a pot of salted water. Bring to a boil, reduce the heat and cook for about 10 minutes.

Use the base of a glass to smash the Brussels sprouts, then add to a lined baking sheet.

Brush the Brussels sprouts with the garlic ginger dressing and roast for 20 minutes.
