Vegan asparagus broccoli pasta

This asparagus broccoli pasta is the perfect balance of healthy greens and sumptuous pasta.  A vegan pasta dish that combines herbs, garlic and olive oil for lots of flavour. Perfect as an easy weeknight meal!

Ingredients needed - Pasta - Asparagus - Broccoli - Kale - Onion - Garlic - Coriander - Non-dairy milk - Apple cider vinegar - Salt & pepper

Step 1

Prepare the asparagus by snapping off the woody ends

Step 2

Prepare the pasta to packet instructions

Step 3

Fry onion, garlic, asparagus, kale and broccoli in a skillet

Step 4

Blend the asparagus mixture, milk, vinegar, herbs, salt and pepper.

Step 5

Transfer pasta to a skillet and pour over the sauce

Step 6

Use tongs to combine the pasta and sauce

Plate up and add more herbs and a drizzle of olive oil to taste
