This mango cucumber salad is fresh and light and perfect as a holiday side salad!

Mango Salad Ingredients

1. Make the dressing

Combine olive oil, apple cider vinegar and fresh mint leaves. Whisk or stir to make the mint dressing. Lemon juice can be used in place of vinegar if citrus works for you.

2. Prepare the cucumber

Peel the English cucumber and use a small spoon to remove the seeds.

3. Prepare the mango

Slice the mango so you have large slices. Then slice the pieces both vertically and horizontally almost to the skin. Open up so you have a mango 'hedgehog' and slice off the chunks.

4. Combine the salad ingredients

Combine the fruit and veggies and drizzle over the mint dressing. Serve with BBQ food, or for a holiday buffet dinner!
