Maple chia pudding with blueberry jam

Ingredients

1/4 cup chia seeds 1 cup non-dairy milk 1/2 tsp maple syrup 1 cup blueberries 1 tbsp pumpkin seeds

Step 1

Add the chia pudding ingredients to a bowl or container.  Whisk the ingredients so the chia seeds combine with the milk.

Set the chia pudding mixture aside for at least an hour. Whisk the ingredients halfway through to break up any clumps of chia that may form.

Make the blueberry jam. Add blueberries to a pan and heat until broken down into mostly liquid. Take off the heat and add 1 tbsp of chia seeds. Stir then set aside to thicken.

Step 4

Put the pudding together! Spoon the chia pudding into your glass or bowl, then top with the blueberry jam and some pumpkin seeds. Then enjoy!
