This baked cod with panko is a fun easy weeknight dinner made with frozen fish.

Ingredients

Bake the frozen cod fillets for 15 minutes in an ovenproof dish.

Combine panko with olive oil, herbs, garlic and apple cider vinegar.

Pat the panko crust on to the cod fillets.

Return the cod to the oven and bake for a further 15 minutes.

- cover the cod when first baking - ensure the fish is white throughout, and can easily be flaked with a fork
