Peel and dice the parsnips and carrots. Mince the garlic.

Fry onion, celery, herbs and spices in olive oil in a soup pot.

pour in vegetable stock and bring to a boil, then reduce the heat.

pour in the coconut milk and cook the soup for around 20 minutes.
