Add the peeled pears to a large saucepan with the apple juice, ginger, cardamom and cinnamon and star anise. Bring to a boil, then reduce the heat to a light simmer.
Remove the pears. Increase the heat of the apple juice mixture so that is on a low boil. Leave to boil for around 15 minutes so that it reduces into a syrup.
Plate the pears and pour over a little of the syrup Serve immediately and enjoy!
