Saute diced celery and leeks in a little olive oil in a large soup pot, and add dried thyme.

Add diced cauliflower and russet or Yukon Gold potatoes to the pot and cook for a few minutes.

Pour in vegetable broth, bring to a boil, reduce the heat and pour in coconut milk. Cook for about 20 minutes.

Blend the cauliflower soup with an immersion blender, or puree in a food processor. Season with salt and black pepper to taste.
