This quinoa arugula salad with pomegranate is light and fresh and perfect as a summer side salad for BBQ food or picnic food.

Cook quinoa according to packet instructions

Combine olive oil, apple cider vinegar, honey and garlic and whisk to make a salad dressing

Combine cooled quinoa, arugula, pomegranate seeds,  mint and pepitas and drizzle over the dressing

Recipe Tips

- fluff up the cooled quinoa with a fork - adjust the dressing with more honey or vinegar to taste - add cheese, chicken or more seeds to make it more hearty!
