Remove the membrane and seeds from the peppers, rub with oil and roast in a baking tray for 20 minutes.

Cook diced onion, garlic and fennel in olive oil on a low heat for 4-5 minutes.

Combine ricotta cheese, the onion mixture, herbs, egg yolk, salt and black pepper and stir well.

Spoon the ricotta stuffing into the peppers and roast for 15-20 minutes.
