Serve up this roast spaghetti squash with zucchini as a fun Thanksgiving side dish for the big day!

Ingredients

Spaghetti squash Zucchini Olive oil Garlic Thyme Salt Black pepper

Slice the squash lengthways in half and rub on oil, salt and black pepper. Place cut side down and roast in the oven for 30-40 minutes.

Allow the squash to cool a little, then use a fork to create the spaghetti 'strings'.

Place the spaghetti squash strings in a colander to drain of excess liquid.

Saute sliced zucchini in a little olive oil in a skillet until softened, adding fresh thyme leaves.

Add the spaghetti squash to the skillet and cook for 2-3 minutes until warmed through.
