Toss carrots in olive oil, maple syrup and sweet paprika.

On a lined baking sheet, arrange the carrots with a little space between them and roast for 30 minutes.

Make the tahini sauce by stirring together tahini and water until your get a creamy sauce-like consistency.

Place the roasted carrots on your serving plate and drizzle over the tahini sauce. Scatter over herbs and pomegranate.
