Drizzle olive oil in a large soup pot and cook onion until softened, then add the garlic, ginger, turmeric and ground coriander and cook for a few minutes.

Tip in the diced and peeled carrot and rutabaga and cook for a few minutes, stirring often so they don't stick.

Pour in vegetable broth and bring to a boil. Then reduce the heat and cook for 20 minutes.

Pour in non-dairy milk or coconut milk and stir. Use an immersion blender to blend the soup and enjoy!
