Love that this is stew-like and hearty. I will use this recipe all year round, but I can see it being especially wonderful in the fall.

A plant-based soup, you will need fresh vegetables, stock, coconut milk, quinoa and herbs to make your healthy lunch!

Fry onion and garlic in olive oil in a large pot, and add the spices.

Add the vegetables, quinoa and stock to the pot. Bring to a boil, reduce the heat and pour in the coconut milk. Cook for 20-25 minutes.
