This roasted carrot tahini dip is so flavourful and creamy, and super healthy too! An easy to make dip for your summer BBQs, picnics and lunches.
Olive oil & apple cider vinegar
Fresh parsley & pumpkin seeds
Garlic & sweet paprika
Cut into roughly similar sizes for them to bake evenly.
Toss the carrots in olive oil and paprika. Roast for 30 minutes.
Add all ingredients, other than toppings to your blender.
Blend to a thick dip, adding water if required to thin.
Spoon into your bowl then top with pomegranate, seeds and fresh herbs.
