This Thai basil pesto is perfect for a quick weeknight dinner of pesto pasta, it's a vegan and nut free pesto that is packed with flavour and comes together in just ten minutes.


Thai basil Extra virgin olive oil Pumpkin seeds Garlic Apple cider vinegar (or lemon juice)

Step 1

Dry toast the pumpkin seeds Simply add the pumpkin seeds to a skillet, without any oil. Toast on a low heat for 4-5 minutes

Remove any woody stems from the basil. You may not need to do this, but if any of the stems are particularly tough you may wish to remove them

Add all the ingredients to a blender cup

Blend to a thick pesto, scraping down the sides of the blender as needed. Adjust flavours to taste!
