This coconut turmeric rice is a fragrant side dish, made with coconut milk and herbs and garnished with nuts and seeds. Easy to make, it's a vegan and gluten free side that goes with so many main dishes.
How to make
Bay leaf, salt & black pepper
Pistachios, pumpkin seeds & herbs
Rinse your basmati rice in cold water.
Add the rice, coconut milk, vegetable stock, bay leaf and turmeric to a large pot.
Cover the pan and cook on a low simmer. Have a peek after 12 minutes to see how it is coming along. Cook for a further few minutes if required.
Spoon into your serving bowls and top with nuts, seeds and fresh herbs.
