This vegan asparagus soup with broccoli is packed with green vegetables for a healthy spring lunch or light dinner!

Ingredients

Saute onion and garlic in olive oil until softened

Add broccoli, asparagus, zucchini and herbs and saute for 5 minutes

Pour in vegetable stock, bring to a boil then reduce the heat and stir in non-dairy milk. Cook for 30 minutes

Remove the bay leaf then use an immersion blender to blend the soup. Ladle into your bowls and enjoy!
