Honey Spelt Cookies

These honey spelt cookies are sweet from the honey, and with a hint of spice from the cardamom - making them perfect for fall or the holidays!

  • Preheat the oven to 190C and line a baking tray with parchment paper.
  • Sieve the spelt flour into a large bowl, discarding any larger pieces of bran that are left in the sieve. Add the cardamom and baking powder, and stir into the flour.
  • Pour in the melted coconut oil and honey. Stir so the mixture combines. It will be quite sticky from the honey.
  • Place around a tablespoon of cookie 'dough' onto the baking tray, and repeat so you have around 8 cookies. Space them out as the cookies will slightly expand in size.
  • Bake for 10-12 minutes until light golden brown. Watch them carefully for any signs of burning as they turn fast! Remove from the oven and leave on the tray until they harden (they will still be soft when you remove from the oven). Then transfer to a wire rack to cool. Enjoy!

Notes

  • Stir very thoroughly when you pour in the honey and coconut oil so the flour is dissolved into the mixture.
  • Keep the amount of 'batter' you spoon onto your baking tray to around a tbsp. Any more and they will spread too much.
  • The cook time is fairly precise on this recipe, so keep an eye on the cookies after ten minutes. They should be light golden brown, with a hint of darker brown around the edges. Remove from the oven at that point.
  • The cookies will still feel soft to the touch when you remove from the oven. Leave to cool for 5-10 minutes and they will harden. You can then transfer to a wire rack to further cool down.
