Equipment

Ingredients

  • 3 passion fruit
  • 1 cup apple juice
  • 1 tablespoon mint leaves
  • 1 teaspoon honey optional
  • 1 cup sparkling water

Instructions

  • Use a small spoon to scoop the seeds out of the passion fruit.
  • Add the passion fruit seeds to a pitcher or large jar, along with the apple juice, mint and sparkling water. Give it a good stir, and muddle the mint a little to bring out the essence.
  • Place a strainer over your glass and pour the mocktail mixture through. Top with more sparkling water to preference.

Notes

  • Use perfectly ripe passion fruit. If they are green then they definitely aren't ripe, so pick dark purple / brown fruit with some wrinkling to the skin.
  • Add more bubbles! Like a longer drink or just more bubbles? Simply top your glass with more sparkling water.
  • Add honey. Personally I think it is sweet enough without, but if you have a sweet tooth you can drizzle in some honey too.
