Pesto Chicken Skewers

These pesto chicken skewers are fun and flavorful and perfect for summer BBQs or indoor grilling. Easy to make, pile these kabobs on the grill for your next cookout!

  • 2 chicken breasts diced into one inch chunks
  • red bell pepper
  • yellow bell pepper
  • green bell pepper

Pumpkin seed pesto

Instructions

  • If you are making the pumpkin seed pesto in the recipe card above, dry fry the pumpkin seeds in a pan until they lightly brown and start to pop. Allow to cool then add to a blender with all the other pesto ingredients. Blend to a pesto, adjusting with more olive oil to taste and texture preference.
  • Dice the chicken breast into one inch pieces. Add to a container that can be sealed. Spoon in the pesto and mix well so the chicken is coated.
  • Place in the fridge to marinate for 30 minutes (or more). If you follow a low histamine diet you may prefer to cook immediately and not marinate the chicken.
  • Thread the chicken pieces onto your skewers, alternating with bell peppers (or other vegetables).
  • Cook on a medium to high heat on the grill, turning occasionally. If cooking in the oven, bake for 15-20 minutes at 390F / 200C. Use a meat thermometer to check for an internal temperature of 165F at the deepest point of the chicken.

  • You can either use the pesto recipe in the card above, another that is linked or the pesto of your choice.
  • If using wooden skewers, soak in cold water for at least 20 minutes to prevent them from burning on the grill.
  • The chicken should be cooked throughout and white. Use a meat thermometer to check it is 165F at the deepest point.
  • If you follow a low histamine diet you may find it better to cook immediately rather than marinate the chicken due to histamine formation.
