Lychee Mocktail

Light and refreshing, this lychee mocktail is perfect for summer drinks with friends and family! Quick and easy to make!

Equipment

Ingredients

  • 8 lychee canned, in syrup
  • 1 tablespoon elderflower cordial
  • 1 tablespoon mint leaves
  • sparkling water

Instructions

  • Add the lychee (and about a tablespoon of the syrup from the can), elderflower cordial and mint leaves to a blender. Blend to a puree.
  • Place a sieve over a bowl, and pour the lychee puree into the sieve. Use the back of a spoon to press the mixture through the sieve. Discard any puree left in the sieve.
  • Pour the lychee juice from the bowl evenly into your glasses, then top with ice and sparkling water. Stir, add a mint sprig to garnish, then serve immediately.

Notes

  • I suggest not using too much of the syrup that comes in the can of lychee. About a tablespoon is good.
  • Press the puree through the sieve using the back of a spoon, if needed.
  • Give the mocktail a stir before serving so the syrup is combined with the sparkling water.
