Air Fryer Chicken Bites
These air fryer chicken bites are delicious as an appetizer with a dipping sauce, or served with rice or potatoes and veggies for a hearty family dinner. So easy to make in less than 20 minutes!

- 2 pounds boneless skinless chicken breasts 3-4 chicken breasts
- 1 tablespoon olive oil
- ½ teaspoon paprika sweet or smoked*
- 1 teaspoon Italian seasoning
- ¼ teaspoon garlic powder
- ⅛ teaspoon salt
- ⅛ teaspoon black pepper optional
- olive oil spray
Preheat the air fryer for 3 minutes at 390F / 200C.
Pat the chicken breasts dry with paper towel, if required. Dice into small chunks of about an inch thick, so they are bite-size.
Place the chicken bites into a bowl, drizzle on the olive oil and sprinkle in the paprika, Italian herb seasoning, garlic powder, salt and black pepper (if using). Use your hands to coat the chicken pieces in the oil, herbs and spice.
Spray the air fryer basket with a little olive oil spray. Use tongs to place the chicken cubes into the air fryer basket in an even layer, with a little space between them. Air fry for 10-12 minutes at 390F / 200C, giving the basket a good shake about half way through cook time. Use a meat thermometer to check for an internal temperature of 165F, air frying for longer if they haven't reached temperature.
*I suggest my low histamine readers will want to use sweet paprika, which is low histamine per the SIGHI list (scores 0), not hot or smoked paprika.
- Dice the chicken into bite-size pieces of roughly the same size for an even cook time.
- Don't overcook the chicken. Of course, make sure it reaches 165F but don't overcook or you won't get juicy chicken!
