Preheat the air fryer for 3 minutes at 360F / 180C.
Add the chicken breasts to a large bowl. Drizzle on the olive oil, and sprinkle in the sweet paprika, dried thyme, garlic powder, salt and black pepper. Rub the oil and spices all over the chicken breasts.
Use a sharp knife to slice into the chicken breast horizontally, so you have a pocket. Be careful not to slice all the way through!
Place a slice of mozzarella into the pocket, and spoon a tablespoon of pesto over the cheese. If using, add the cream cheese also. It's down to preference, but you can use toothpicks to hold the chicken breast together to help prevent the cheese from oozing out.
Place the chicken breasts in the air fryer so they have space between them to allow the air to circulate. Air fry at 360F / 180C for 18-20 minutes. Check for an internal temperature of 165F at the deepest part of the chicken and air fry for longer if required.
*I suggest my low histamine readers use sweet paprika, which scores 0 on the SIGHI list, rather than hot or smoked paprika (which is higher histamine).
- Timings may need to be amended due to the size of your chicken breasts. If they are larger in size, you may need to add a few more minutes of cook time.
- Add more pesto for even more flavor if you like!
- Make sure to place the chicken breasts in a single layer with space between them to allow for air circulation.
- Wooden toothpicks should be soaked in cold water for at least 15 minutes before use.
- Nutritional information is auto-generated and should be understood to be an estimate.

All ingredients score 0 on the SIGHI list, with the exception of:
- garlic powder, which scores 1.
- black pepper, which scores 2.
- cream cheese scores 0, but has notes on additives you may wish to check.
- use a suitable low histamine histamine pesto, such as my pumpkin seed pesto or your own recipe.
