Chicken and Pomegranate Salad

This chicken pomegranate salad without mayo is a hearty lunch idea, combining shredded chicken, sweet fruit and a tahini dressing. Perfect on crackers or in a sandwich!

Ingredients

  • 1 tablespoon olive oil
  • 2 small boneless skinless chicken breasts
  • 3 tablespoon pomegranate seeds
  • 1 small red apple de-cored, diced
  • 1 tablespoon pumpkin seeds
  • 1 tablespoon shallot or red or white onion, finely diced
  • 1 tablespoon mint leaves finely diced

For the tahini dressing

  • 3 tablespoon tahini
  • ½ teaspoon apple cider vinegar
  • 3 tablespoon warm water more to texture preference
  • pinch salt
  • pinch ground black pepper

Instructions

  • Slice the chicken breasts lengthways into 2-3 pieces (for a quicker cook time). Drizzle olive oil in your skillet and cook the chicken for 5-6 minutes, each side, until cooked through, slightly browned and with a reading of 165F using a meat thermometer at the deepest point of the chicken. Set aside to cool.
  • Shred the chicken breast with two forks or with a stand mixer using the appropriate attachment.
  • Whisk together tahini, apple cider vinegar, warm water, salt and black pepper (optional) until you have a creamy dressing. Adjust with more water to thin, to preference.
  • Add the shredded chicken, pomegranate seeds, diced red apple, pumpkin seeds, diced shallot, mint leaves and tahini dressing to a bowl. Toss to combine so the chicken and fruit is evenly coated in the dressing.

Notes

  • Please be mindful that tahini (sesame) scores 1 on the SIGHI list and is a top ten allergen. Only use if you know you tolerate well.
  • If you are not on a low histamine diet, plain rotisserie chicken can be used.
