Air Fryer Diced Potatoes

These air fried diced potatoes are full of flavor, have crispy edges and fluffy centers and are such a quick and easy side dish!

  • Dice the potatoes into small pieces of a similar size, about 2 cm in size. Place in a large bowl.
  • Drizzle the olive oil over the potatoes, then sprinkle over the paprika, oregano, parsley, garlic powder and salt. Use tongs to toss the potatoes so they are all coated in oil, herbs and spice.
  • Place the cubed potatoes in your air fryer basket in an even layer. Air fry the potatoes at 390F / 200C for 18 minutes, shaking the basket at least once (twice is better) during the cook time. For extra crispy edges, you can air fry for a further 1-2 minutes (depending on the size of the diced potatoes).

Notes

  • Paprika notes: I suggest my low histamine readers use sweet paprika (which scores 0 on the SIGHI list). If using smoked paprika, you may wish to reduce the quantity a little as it's more pungent.
  • Dice the potatoes to roughly the same size for an even cook time.
  • We all like our potatoes slightly differently, so air fry for a minute or so longer for even more browning and crispy edges.
  • Shake the basket! It helps prevent any sticking as well as ensuring the air is circulating around the potatoes and cooking them evenly.
