Making these air fryer diced potatoes couldn't be easier, they have crispy edges and fluffy centers and are so flavorful from herbs and spice! Coming together in less than 25 minutes, serve these cubed potatoes up as a fun side dish or as a snack with a dipping sauce.

If there's one thing my air fryer gets used for every single week, it's making these diced potatoes! Quick, easy and perfect to serve with a protein such as my air fryer boneless chicken thighs or air fryer thin chicken breast, they're a hit with kids and adults alike in my family.
We season the cubed potatoes with herbs, spice and garlic and air fry them up so they have crispy edges (because that's the best bit, no?!). But the tender fluffy centers are a must for me too!

Some notes on a few of them:
- Potatoes - I often use baby potatoes, but russet potatoes and Yukon gold potatoes work so well too. No need to peel the potatoes, just dice into small bite-size cubes.
- Paprika - I suggest my low histamine readers use sweet paprika (scores 0 on the SIGHI list). If using hot or smoked paprika, you may wish to reduce the quantity a little as they are more pungent.
- Oregano and parsley - for some herby fragrant flavor!
- Olive oil - this gives you delicious browning and crispiness, as well as preventing sticking.
Swaps and Variations
Swap up your herbs. Thyme, Italian seasoning or a little sprinkle of dried rosemary are all delicious.
Up the garlic. I'm more of a light sprinkle of garlic myself, but add more if you're a garlic lover!
How to Cook Diced Potatoes in an Air Fryer
It's so easy to make crispy air fried diced potatoes with just a handful of affordable ingredients, and of course an air fryer! I suggest to use tongs too as the air fryer basket will be hot and we don't want burnt fingers . . .
All the instructions are in the recipe card below, but these step by step photos should help guide you.

Step 1: Cube the potatoes
Dice the potatoes into cubes about 2cm in size (no need to peel). They don't need to be perfect, but roughly the same size for an even cook time. Add to a large bowl (image 1).

Step 2: Add herbs and spice
Drizzle olive oil over the diced potatoes, then sprinkle over the sweet paprika, dried oregano, dried parsley, garlic powder and salt. Toss to coat the potato cubes in the seasonings (image 2).

Step 3: Add to your air fryer basket
Add the diced potatoes to your air fryer basket, in an even layer with a little space between them to allow the air to circulate. If using a dual basket air fryer as I do, then you'll likely want to use both baskets (image 3).

Step 4: Air fry the potato cubes
Air fry the potatoes at 390F / 200C for 18-20 minutes, shaking the basket at least once in the middle of the cook time, so they are golden brown in color, have crispy edges and fluffy centers. For crispier edges, you can air fry for a few more minutes, to preference (image 4).
Recipe Tips and Notes
- No need to peel! If using russet potatoes or baby potatoes, then there's no need to peel them. Leaving the skins on gives you nice crispy edges.
- Dice to an even size. This helps the diced potatoes cook evenly in the air fryer.
- Don't skip the oil! Nobody likes a soggy potato and the oil gives you browning and crispiness.
- Shake the basket. I like to shake the air fryer basket two or three times during the cook time to ensure an even cook, and also to help prevent any sticking.
Frequently Asked Questions
Russet potatoes, Yukon gold potatoes, baby potatoes and new potatoes all work well to make cooked diced potatoes in the air fryer.
There's no need to peel potatoes before cooking in the air fryer and leaving the skins on will give you crispy edges.
There's no need to parboil the potatoes. We cook them up in air fryer from start to finish!
You can freeze the potatoes for up to three months. Allow them to cool completely and then transfer to a freezer-safe container. My low histamine readers may wish to read the SIGHI advice on food storage.

Air Fryer Diced Potatoes
Ingredients
- 4 cups diced potatoes russet, Yukon gold or baby potatoes
- 1.5 tablespoon olive oil
- 1 teaspoon paprika see notes on type of paprika
- ½ teaspoon dried oregano
- ¼ teaspoon dried parsley
- ¼ teaspoon garlic powder
- ⅛ teaspoon salt
Instructions
- Dice the potatoes into small pieces of a similar size, about 2 cm in size. Place in a large bowl.
- Drizzle the olive oil over the potatoes, then sprinkle over the paprika, oregano, parsley, garlic powder and salt. Use tongs to toss the potatoes so they are all coated in oil, herbs and spice.
- Place the cubed potatoes in your air fryer basket in an even layer. Air fry the potatoes at 390F / 200C for 18 minutes, shaking the basket at least once (twice is better) during the cook time. For extra crispy edges, you can air fry for a further 1-2 minutes (depending on the size of the diced potatoes).

- Paprika notes: I suggest my low histamine readers use sweet paprika (which scores 0 on the SIGHI list). If using smoked paprika, you may wish to reduce the quantity a little as it's more pungent.
- Dice the potatoes to roughly the same size for an even cook time.
- We all like our potatoes slightly differently, so air fry for a minute or so longer for even more browning and crispy edges.
- Shake the basket! It helps prevent any sticking as well as ensuring the air is circulating around the potatoes and cooking them evenly.

This was so good. I have been eating a lot of sweet potatoes and needed something new tob do with them so tried this. Very easy and very tasty. Will definitely do again. They turned out crispy on the outside and fluffy on the inside. Great flavor. Husband liked them, too.
