Peach Corn Salsa

- 2 peaches de-stoned, diced
- 1 cup corn fresh or canned*
- ½ cup English cucumber diced
- ½ cup red bell pepper diced
- ¼ cup cilantro diced
- ¼ cup green onion or white or red onion, diced
- 1 teaspoon extra virgin olive oil
- 2 teaspoon apple cider vinegar
- ½ garlic clove minced or finely diced, optional
- pinch salt
- pinch black pepper optional
De-stone and dice the peaches into small pieces.
Dice the English cucumber, red bell pepper, green onion (or red or white onion) into small pieces of a similar size. Dice the cilantro and mince the garlic, if using.
Whisk together the olive oil, apple cider vinegar, minced garlic, salt and black pepper, if using.
Combine all the diced fruit, vegetables and herbs in your serving bowl and stir through the dressing. Toss to combine.
*Choice of corn is to preference. You can use fresh sweet corn, thawed corn or tinned corn if you tolerate canned goods.
