Come summer, I love all things fresh and light to serve with picnic food, BBQ food or evening meals (hopefully enjoyed in the sunshine!). Much like my mango corn salsa, this fresh corn and peach salsa makes the most of sweet fruit, tasty veggies and fragrant herbs.

Perfect for summer! We combine fresh sweet juicy peaches with veggies and fresh cilantro for a fun summer appetizer or side dish.
Fresh ingredients. It's so easy to make this fresh fruit and corn salsa with tasty produce and a few pantry staples.
Quick recipe. All we need is a bit of dicing of fruit and veggies to make this salsa in just a few minutes!

Some notes on a few of them:
- Peaches - you can use regular fresh peaches or donut peaches, just be sure to choose delicious juicy ones for the best sweetness!
- Corn - if you have it, fresh sweet corn kernels from the cob are delicious, but if you tolerate it well, canned corn can be used in a pinch. If using fresh corn, it's also an option to grill it before use.
- Cucumber - I suggest to use English cucumber, which doesn't need to be peeled or have the seeds removed.
- Bell pepper - choose a red pepper for the best sweetness! Yellow pepper works well too, but green has more bitterness.
- Cilantro - for that herb flavor, this is coriander for my UK readers (and use fresh not dried of course!).
- Onion - this recipe can easily use green onion or red onion, or white onion if you prefer a lower histamine option.
📖 Swaps and variations
Swap apple cider vinegar for a fruit juice. If vinegar doesn't work for you, then swap for apple juice or pomegranate juice. They won't have the same 'tang' but will give a nice sweetness.
Swap vinegar for lime juice. If it is suitable for you, then lime juice works well in salsa. This likely isn't suitable for my low histamine readers.
🔪 Step by step instructions
Making this fresh peach corn salad is so easy, requires just fruit, veggies, herbs and some pantry staples and is super quick to do!
All the instructions are in the recipe card below, but these step by step photos should help guide you.
Step 1: De-stone peaches
Remove the stones from the fresh peaches, then dice into small pieces (image 1).
Step 2: Dice fruit and vegetables
Dice your English cucumber, red bell pepper, green onion and fresh cilantro. If using fresh raw sweet corn, slice the kernels off the cob (image 2).
Step 3: Make the dressing
Whisk together extra virgin olive oil, apple cider vinegar, minced garlic, salt and black pepper (if using) (image 3).
Step 4: Make your fresh salsa!
Combine the diced peaches, corn, bell pepper, cucumber, green onion, cilantro in a bowl. Drizzle on the dressing and toss to combine (image 4).
💭 Recipe tips and notes
- Make sure to use ripe sweet juicy peaches so they have lots of delicious summer flavor!
- You can use either raw summer sweet corn kernels, thawed corn or from a can if that works for you.
- Dice the fruits and veggies to a similar size so they work well as a chip dip or a 'sauce' for meats, fish or veggie dinner ideas.
- Adjust the amount of garlic and apple cider vinegar to taste preference.
📋 Frequently asked questions
You can use fresh raw sweet corn when it's in season, thawed frozen corn or canned corn to make homemade salsa. My low histamine readers may wish to opt for fresh corn.
Definitely! Grilling the corn first will give a nice flavor, but will add a little extra cook time to the recipe.
Nectarines would be good and have a similar sweet flavor!
If you like less 'crunch' from the peppers, then you can definitely roast them and then dice to include in your salsa.

Peach Corn Salsa
Ingredients
- 2 peaches de-stoned, diced
- 1 cup corn fresh or canned*
- ½ cup English cucumber diced
- ½ cup red bell pepper diced
- ¼ cup cilantro diced
- ¼ cup green onion or white or red onion, diced
- 1 teaspoon extra virgin olive oil
- 2 teaspoon apple cider vinegar
- ½ garlic clove minced or finely diced, optional
- pinch salt
- pinch black pepper optional
Instructions
- De-stone and dice the peaches into small pieces.
- Dice the English cucumber, red bell pepper, green onion (or red or white onion) into small pieces of a similar size. Dice the cilantro and mince the garlic, if using.
- Whisk together the olive oil, apple cider vinegar, minced garlic, salt and black pepper, if using.
- Combine all the diced fruit, vegetables and herbs in your serving bowl and stir through the dressing. Toss to combine.
Notes
- Dice the fruit and vegetables into small pieces of a roughly similar size.
- For onion, you can use red onion or green onion, finely diced. For my low histamine readers, white onion scores 0 on the SIGHI list and can be used as a swap.
- Make sure to use ripe sweet peaches for the best flavor!
