- 4 boneless skinless chicken breasts
- 1 tablespoon olive oil
- 1 tablespoon fresh rosemary leaves finely diced
- 1 tablespoon fresh sage leaves finely diced
- ¼ teaspoon garlic powder
- ⅛ teaspoon salt
- ⅛ teaspoon black pepper optional
Preheat the oven to 425F / 220C.
Pat the chicken breasts dry with paper towel and place in your baking dish. Drizzle over olive oil and use your hands to coat the chicken both sides. Sprinkle over the rosemary and sage, garlic powder, salt and black pepper (optional) both sides.
Roast the chicken breasts for 20-22 minutes. Check for an internal temperature of 165F at their deepest point using a meat thermometer, and cook for longer if required. Cook time will vary slightly, depending upon the size of your chicken breasts.
