Much like my rosemary thyme chicken and chicken with herbs de Provence, this rosemary and sage chicken makes the most of delicious herbs for so much flavor. We use just a handful of ingredients and basic kitchen equipment, making it perfect for a weeknight meal!
While you could use dried herbs for this recipe, there's something extra delicious about the fresh sage and rosemary we use for this chicken dish. So let me show you how to make this fresh herb chicken recipe for all the family tonight!

- Chicken - we use boneless skinless chicken breasts for this recipe.
- Rosemary and sage - I do suggest to use fresh herbs as the flavor is so much more fresh and fragrant.
- Garlic powder - to add a little hum of heat.

Swap fresh herbs for dried herbs. If using dried herbs you want to use about a third of the quantity as they are far more pungent.
Sear the chicken first. Optionally, you can sear the herbed chicken breasts in a skillet for some browning and then transfer to a baking dish.

Making this rosemary and sage chicken recipe is super simple, has minimal ingredients and all you need is a baking dish and no fancy kitchen equipment!

Step 1: Season the chicken
Pat dry the chicken breasts with paper towel and place in a baking dish. Drizzle on the olive oil and rub over the chicken, both sides. Sprinkle over the diced sage and rosemary, garlic powder, salt and black pepper, if using (image 1).
Step 2: Roast the chicken
Roast the chicken in the oven for 20-22 minutes, making sure to check for an internal temperature of 165F using a meat thermometer at the deepest point (image 2). If your chicken breasts are thicker, they may require longer cook time.

- Dice the sage and rosemary quite finely so they can easily be sprinkled over the chicken.
- Season both sides of the chicken with the herbs, garlic, salt and (optional) black pepper.
- Cook time will vary slightly depending upon the size and thickness of the chicken breasts, so check the temperature for a reading of 165F at their deepest point.

Yes, you can easily sear the seasoned chicken in a little olive oil in your skillet to get some browning, then transfer to roast in the oven.
You can use dried herbs, but they will have a slightly different flavor. Dried herbs are more pungent than fresh, so use about a third of the amount.
If you wish, you can use a meat mallet to flatten the chicken. Place between film, then use the mallet to flatten into an even sized piece. As the chicken will be thinner, you will likely need to reduce the cook time.

- 4 boneless skinless chicken breasts
- 1 tablespoon olive oil
- 1 tablespoon fresh rosemary leaves finely diced
- 1 tablespoon fresh sage leaves finely diced
- ¼ teaspoon garlic powder
- ⅛ teaspoon salt

Instructions
- Preheat the oven to 425F / 220C.
- Pat the chicken breasts dry with paper towel and place in your baking dish. Drizzle over olive oil and use your hands to coat the chicken both sides. Sprinkle over the rosemary and sage, garlic powder, salt and black pepper (optional) both sides.
- Roast the chicken breasts for 20-22 minutes. Check for an internal temperature of 165F at their deepest point using a meat thermometer, and cook for longer if required. Cook time will vary slightly, depending upon the size of your chicken breasts.
