⭐ Why this recipe is so good

Packed with flavor. I love to pick rosemary and sage from my back yard, but from the store is good too!

One pan chicken recipe. As we are roasting the chicken, all you need is a baking dish, meaning there's less post-dinner clean up!

Minimal ingredients. Just a handful of affordable ingredients to make this simple chicken dinner.

🌿 Ingredients

individually labelled chicken breasts, salt, black pepper, garlic powder, sage, rosemary and olive oil.

All the ingredients and their quantities are set out in the recipe card below.

Some notes on a few of them:

  • Chicken - we use boneless skinless chicken breasts for this recipe.
  • Rosemary and sage - I do suggest to use fresh herbs as the flavor is so much more fresh and fragrant.
  • Garlic powder - to add a little hum of heat.

📖 Swaps and variations

Swap fresh herbs for dried herbs. If using dried herbs you want to use about a third of the quantity as they are far more pungent.

Sear the chicken first. Optionally, you can sear the herbed chicken breasts in a skillet for some browning and then transfer to a baking dish.

🔪 Step by step instructions

Making this rosemary and sage chicken recipe is super simple, has minimal ingredients and all you need is a baking dish and no fancy kitchen equipment!

All the instructions are set out in the recipe card below, but these step by step photos should help guide you.

uncooked boneless skinless chicken breasts in a white baking dish sprinkled with diced sage and rosemary leaves.

Step 1: Season the chicken

Pat dry the chicken breasts with paper towel and place in a baking dish. Drizzle on the olive oil and rub over the chicken, both sides. Sprinkle over the diced sage and rosemary, garlic powder, salt and black pepper, if using (image 1).

Step 2: Roast the chicken

Roast the chicken in the oven for 20-22 minutes, making sure to check for an internal temperature of 165F using a meat thermometer at the deepest point (image 2). If your chicken breasts are thicker, they may require longer cook time.

💭 Recipe tips and notes

  • Dice the sage and rosemary quite finely so they can easily be sprinkled over the chicken.
  • Season both sides of the chicken with the herbs, garlic, salt and (optional) black pepper.
  • Cook time will vary slightly depending upon the size and thickness of the chicken breasts, so check the temperature for a reading of 165F at their deepest point.

📋 Frequently asked questions

Can I sear the chicken before roasting?

Yes, you can easily sear the seasoned chicken in a little olive oil in your skillet to get some browning, then transfer to roast in the oven.

Can I use dried herbs rather than fresh herbs?

You can use dried herbs, but they will have a slightly different flavor. Dried herbs are more pungent than fresh, so use about a third of the amount.

Should you flatten the chicken before roasting?

If you wish, you can use a meat mallet to flatten the chicken. Place between film, then use the mallet to flatten into an even sized piece. As the chicken will be thinner, you will likely need to reduce the cook time.

🥗 Serving suggestions

Serve this sage rosemary chicken with hot or cold sides, it's very versatile! Some ideas:

  • Choose rice, quinoa, my roasted potatoes and zucchini for some starches, or see my guide to cooking frozen cauliflower rice for a lower carb option.
  • For veggies, choose from my roasted broccoli and Brussels sprouts, roasted asparagus and carrots or my pesto roasted vegetables for something a little fun!
  • Come summer, pair with light and refreshing salads such as my cucumber pomegranate salad or my peach corn salsa.

Hi, I’m Claire. After a diagnosis of MCAS I began to follow a low histamine diet, which has helped me manage my symptoms. Here I hope to show that a restrictive diet can still be full of flavourful meals, and help you enjoy being creative in the kitchen.
