Salad Kebabs

These easy salad kebabs combine fresh mozzarella, fruits, veggies and herbs for a fun party appetizer or finger food idea! Recipe makes 12 kebabs, with a suggested serving of 3 kebabs per person.

Equipment

  • Bamboo skewers
  • Blender to make the pesto sauce

Ingredients

  • 12 mini mozzarella balls
  • 12 Persian cucumber slices or English cucumber, diced into half moons
  • 12 fresh basil leaves
  • 1 cup lettuce diced into small pieces
  • 12 melon chunks
  • ¼ cup pesto for drizzling

Instructions

  • Thread the skewers with a mini mozzarella ball, cucumber slice, lettuce, basil leaf and melon chunk.
  • Spoon the pesto into a bowl, then drizzle over the kebabs to serve.

Notes

  • I use small bamboo skewers to make these, but adjust the amount of salad foods you use to the size of your skewers.
  • Swap out the salad items as you like. Also delicious are radishes, carrot slices, sweet bell pepper slices and other herbs.
  • Have some pesto leftover? Simply spoon into a freezer safe container for another meal!
