These salad kebabs are a fun mix of fresh cheese, salad veggies and fruit with a herby pesto sauce. So easy to prepare in 20 minutes (or less!) as a quick no-cook party appetizer with easy to find ingredients!

If there's one thing that I know both adults and kids will enjoy at a summer party, it's a kebab (or skewer!). So let's make them as a fun salad kebab to get the veggies in!
Often I find appetizers a bit tricky on a low histamine diet, but these kabobs work perfectly for me, couldn't be easier to make, and are simple to customize with other salad veggies or fruits too.

All the ingredients and their quantities are set out in the recipe card below.
Some notes on a few of them:
- Mini mozzarella balls - sometimes called mozzarella pearls, these are a fresh cheese that come in a package with a liquid.
- Cucumber - I like to use Persian cucumbers (mini cucumbers), and the kids love them too, but English cucumber can also be used if you dice into rounds, then half moon shapes.
- Lettuce - both iceberg and butter lettuce work well.
- Melon - I like to use cantaloupe melon as it adds sweetness and works so well with the cheese and cucumber.
- Fresh basil - for some herby flavor.
What's a Good Sauce to Pair with Salad Kebabs?
I suggest to use my pumpkin seed pesto or pesto without pine nuts. They're easy to make, the herby flavor gives some 'caprese' vibes along with the mozzarella on the kebabs and it's a tasty low histamine option (depending on personal food intolerances).
What are Some Other Ingredients to Make Salad Kebabs?
There are lots of choices, including:
Savory - choose from radishes, carrot slices, slivers of fennel or tomatoes (not low histamine).
Sweet - so many fruits work well, including diced mango, peaches, blueberries and blackberries.
How to Make Salad Kabobs
All you need to make this fun party appetizer is some bamboo skewers, and a blender if you're making your own pesto sauce. Other than that, it's easy to find ingredients from the store!
All the instructions are in the recipe card below, but these step by step photos should help guide you.

Step 1: Prep the ingredients
Slice your mini cucumbers, dice the melon and cut into chunks and make your pesto, if using homemade (image 1).

Step 2: Thread the kebabs with salad
On each bamboo kebab, thread a mini mozzarella ball, slice of cucumber, basil leaf, melon chunk and lettuce. Repeat for your 12 kebabs (image 2).
Recipe Tips and Notes
- If you're making your own pesto, I suggest to do this before assembling the salad skewers.
- Adjust the serving sizes depending on whether you have smaller or larger bamboo skewers.
- Not a fan of pesto? A simple little drizzle of good quality extra virgin olive oil, with a pinch of salt would be delicious.
Frequently Asked Questions
The kebabs don't freeze well, so it isn't recommended. I suggest to make them fresh and serve quite soon afterwards.

Salad Kebabs
Equipment
- Bamboo skewers
- Blender to make the pesto sauce
Ingredients
- 12 mini mozzarella balls
- 12 Persian cucumber slices or English cucumber, diced into half moons
- 12 fresh basil leaves
- 1 cup lettuce diced into small pieces
- 12 melon chunks
- ¼ cup pesto for drizzling
Instructions
- Thread the skewers with a mini mozzarella ball, cucumber slice, lettuce, basil leaf and melon chunk.
- Spoon the pesto into a bowl, then drizzle over the kebabs to serve.
Notes
- I use small bamboo skewers to make these, but adjust the amount of salad foods you use to the size of your skewers.
- Swap out the salad items as you like. Also delicious are radishes, carrot slices, sweet bell pepper slices and other herbs.
- Have some pesto leftover? Simply spoon into a freezer safe container for another meal!
