Simple Passion Fruit Coulis

- 10 passion fruit
- 2 tablespoon white sugar I use caster sugar
Slice the passion fruit open and use a small spoon to scoop out the pulp.
Spoon the passion fruit pulp and seeds and sugar into a saucepan. Bring to a low-medium heat so the sauce is at a light simmer, but not a hard boil. Simmer for 10-12 minutes, stirring fairly frequently to help thicken the sauce.
Remove the pan from the heat and enjoy the coulis warm, or set aside to cool.
Optional: strain the passion fruit sauce through a fine mesh sieve to remove the seeds.
- Use ripe passion fruit so they are sweeter rather than more sour in taste.
- Adjust the sweetness of the coulis to taste, adding more sugar if you have a sweet tooth or the passion fruit is more sour to taste!
- It is optional whether to strain the coulis or not. If you prefer to remove the seeds, use a spatula or the back of a wooden spoon to press it through a fine mesh sieve.
