I think we all need some quick, easy dinner ideas that satisfy kids and adults alike when time is tight. This recipe checks all the boxes in my book! Hearty protein? Check. Colorful veggies? Check. One dish (or basket!) meal? Check.
Just like my air fryer stuffed chicken recipe, making air fryer chicken and vegetables requires ingredients we often have to hand. Plus, you easily can swap the veggies in and out for those you like best.

Simple ingredients. Just like my air fryer pesto chicken, making chicken and veggies in the air fryer uses easy to find ingredients we often have to hand.
Deliciously spiced. We use a similar herb and spice blend to that in my air fryer chicken mini fillets recipe, of thyme and paprika - it's so good!
Quick and easy. All simple recipe steps, very little hands-on prep time and just 15 minutes of cook time!
🐓 Ingredients
All the ingredients and their quantities are set out in the recipe card below.
Some notes on a few of them:
- Chicken - this recipe uses boneless skinless chicken breast which we dice into small bite-size pieces.
- Veggies - I've stuck to low histamine vegetables, of zucchini, sweet bell peppers and baby corn. Broccoli would also be good!
- Paprika - I like to use sweet paprika, both for the flavor and because it's lower histamine (scores 0 on the SIGHI list), but you could use hot paprika if it is suitable for you (likely not low histamine readers).
🥦 Choice of veggies
As we are cooking chicken and vegetables together, they need to have the same cook time. If you wish to use cauliflower or asparagus, I would suggest to add them to the air fryer basket a little while into the air frying time, as they cook quite fast.
While my air fryer root veggies are delicious, it wouldn't work too well to cook carrots or parsnips alongside the chicken pieces as they have a longer cook time unless you dice into quite small pieces.
🔪 How to cook chicken and vegetables in an air fryer
Making air fryer chicken breast and vegetables is super simple, uses easy to find ingredients and has a delicious flavor of herbs and spice.
All the instructions are set out in the recipe card below, but these step by step photos should help guide you.
Step 1: Combine chicken and veggies
Dice your boneless skinless chicken breast into small pieces, and dice the bell peppers, zucchini and baby corn into small pieces also. Add to a large bowl (image 1).
Step 2: Season the chicken and veggies
Drizzle the olive oil over the diced chicken and vegetables, and sprinkle over dried thyme, sweet paprika, garlic powder and salt. Use tongs or your hands to toss so everything is coated in the seasoning (image 2).
Step 3: Add to air fryer basket
Lightly spray the air fryer basket with olive oil spray. Use tongs to add the chicken and vegetables to your pre-heated air fryer basket (image 3). While you can have a little overlap, don't pile the chicken and veggies up too much as the air won't be able to circulate. If necessary, use both baskets if you have a dual basket air fryer (as I do), or work in batches.
Step 4: Air fry chicken and veggies!
Air fry the chicken and vegetables for 15 minutes at 400F / 205C, shaking the basket every 5 minutes or so (image 4). Make sure to check the chicken for an internal temperature of 165F at the deepest point with a meat thermometer for safe cooking. Air fry for a few more minutes, if needed.
💭 Recipe tips and notes
- Dice the chicken and vegetables into small bite-size pieces of a roughly similar size for an even cook time.
- Don't overcrowd the basket or pile the chicken cubes and veggies up too much as the air won't be able to circulate and cook them.
- I like to very lightly spray the air fryer basket with olive oil to help prevent sticking and to help get that delicious char. As the chicken and vegetables are tossed in olive oil already, it may not be necessary, but I like to be sure!

It's very easy to freeze this recipe. Simply allow the chicken and veggies to completely cool, then transfer to a freezer-safe container. My low histamine readers may wish to read the SIGHI advice on freezing.

Air Fryer Chicken and Vegetables

- 2 boneless skinless chicken breasts diced into bite-size pieces
- 1 red bell pepper diced
- 1 yellow bell pepper
- ½ zucchini diced into rounds, then halved
- 4 baby corn halved widthways
- 2.5 tablespoon olive oil
- 1 teaspoon dried thyme
- ½ teaspoon sweet paprika
- ¼ teaspoon garlic powder
- ¼ teaspoon salt

- olive oil spray
Instructions
- Preheat the air fryer at 400F / 205C for 3 minutes.
- Dice the chicken breasts into small bite-size pieces. Dice the vegetables into similar sized pieces. Add to a large bowl.
- Drizzle the olive oil over the chicken and vegetables, then sprinkle over the thyme, sweet paprika, garlic powder and salt. Use tongs to toss so the chicken and vegetables are evenly coated in the oil, herbs and spice.
- Lightly spray the air fryer basket with olive oil spray. Use your tongs to add the chicken and vegetables to your air fryer basket. Arrange so they are in roughly a single layer. A little overlap is fine, but don't pile them up too much or the air won't be able to circulate well.
- Air fry the chicken and vegetables for 15 minutes at 400F / 205C, shaking the basket every 5 minutes or so. Make sure to check the chicken for an internal temperature of 165F at the deepest point for safe cooking. Air fry for a few more minutes, if needed.
- Season with black pepper and more salt, to taste preference.
Notes
- If you have a smaller air fryer you may need to work in batches. Or, if like me, you have a dual basket air fryer, then use both baskets.
- Dice the chicken into small pieces of roughly the same size for an even cook time.
- Spraying the air fryer basket with olive oil spray isn't absolutely necessary as the chicken and vegetables are coated already, but I like to do so very lightly to help prevent any sticking.
