Easy family dinner. The beauty of this air fryer chicken breast and potatoes is how simple it is! We cook them up together so you have the main dinner items, and just need to add some veggie sides.
No need to turn the oven on. Using an air fryer is so quick and more affordable than roasting chicken in the oven.
Gluten free, dairy free and low histamine. We use a handful of pantry staples to add herbs and spice to the chicken breast. They are suitable for all these dietary requirements and make for a fun low histamine meal idea.

Some notes on a few of them:
- Chicken - we use boneless skinless chicken breast for this recipe. It's best to use fresh chicken breasts that are roughly the same size for an even cook time.
- Potatoes - I suggest to use something like russet potatoes or Yukon gold potatoes. I've also used baby potatoes and they worked so well too!
- Paprika - I use sweet paprika for this recipe as it is less intense in flavor, and also suitable for my low histamine readers.
📖 Swaps and variations
Swap individual herbs for a pre-done herb mix. If it works for you, then herbes de Provence or Italian seasoning both give a lovely flavor.
Swap sweet paprika for regular paprika. I suggest to use a little less as it has a more punchy spicy flavor, but you can use regular paprika or smoked paprika. My low histamine readers are likely better to stick to sweet paprika, which is low histamine per the SIGHI list.
🔪 Step by step instructions
Making this air fryer chicken breast and potatoes is super simple, and all you need is an air fryer, tongs and meat thermometer! It's quick and easy with very little 'hands on' prep time, making it perfect for a weeknight dinner.

Step 1: Make the spice dressing
Combine olive oil, dried thyme, dried oregano, garlic powder and sweet paprika in a small bowl. Stir or whisk together (image 1).
Step 2: Prep the potatoes
Peel, then dice the potatoes into small cubes about an inch thick. Add to a large bowl and drizzle on half of the herb and spice oil. Toss to coat the potatoes (image 2).
Step 3: Air fry the potatoes
Add the diced potatoes to your air fryer basket in an even layer with a little space in between them. Air fry at 380F for 12 minutes, shaking the basket after 5-6 minutes (image 3).
Step 4: Prep the chicken breasts
Pat the chicken breasts dry with paper towel. Add to the bowl the potatoes were previously in, and drizzle on the remaining spiced oil. Rub over the chicken breasts, both sides (image 4).
Step 5: Add the chicken to the air fryer
If you are using a dual basket air fryer, place the chicken breasts in the other drawer. If using a single drawer air fryer, use tongs to push the potatoes to the side and place the chicken breasts with a little space between them (image 5).
Step 6: Air fry the chicken and potatoes
Air fry the chicken and potatoes for 15-16 minutes at 380F, flipping the chicken after about 10 minutes. Check for an internal temperature of 165F at the deepest part of the chicken and cook for longer if needed (image 6). Check the temperature again to ensure the chicken is safely cooked through.
💭 Recipe tips and notes
- Adjust herbs and spice to preference. Use a little less, or a little more depending on how you like it!
- Dice to an even size. It's best to dice the potatoes into pieces of roughly the same size, of about an inch thick, for an even cook time.
- Leave space between your chicken and potatoes. To let the air circulate, try not to overcrowd your air fryer basket.
- Check the temperature. Always use a meat thermometer to check for an internal temperature of 165F at the deepest point of the chicken breast. Air fry for longer if need be, if you are using larger chicken breasts for example.

🥄 Storage
It is recommended to keep cooked chicken in the fridge for no more than four days (Healthline). I suggest that my low histamine readers cook 'to order' and don't keep leftovers in the fridge (see SIGHI for more details).
You can easily freeze the cooked chicken and potatoes. I suggest to freeze them in separate freezer-safe containers. The USDA recommends freezing cooked chicken for up to four months. My low histamine readers may wish to reduce this time as SIGHI suggest that 'frozen food should not be stored for an unnecessarily long time'.

Air Fryer Chicken Breast and Potatoes

- 2 tablespoon olive oil
- 1 teaspoon sweet paprika or smoked paprika*
- ½ teaspoon dried thyme
- ¼ teaspoon dried oregano
- ¼ teaspoon garlic powder
- pinch salt
- pinch black pepper optional
- 2 large potatoes I suggest russet or Yukon gold
- 2 boneless skinless chicken breasts
Instructions
- Preheat the air fryer to 380F / 195C for 3 minutes.
- Combine the paprika, thyme, oregano, garlic powder, salt and black pepper in a small bowl with the olive oil. Stir or whisk together.
- Peel the potatoes and dice into 1 inch pieces. Add to a large bowl and drizzle on half of the spiced oil. Toss to coat the potatoes.
- Add the potato pieces into the air fryer in an even layer, with a little space between them so the air can circulate. Air fry the potatoes for 12 minutes at 380F / 195C, shaking the basket after 5-6 minutes.
- Pat the chicken breasts dry with paper towel, then place them in the bowl and pour in the remaining seasoned oil. Rub the oil over the chicken breasts to coat.
- If you have a dual basket air fryer add the chicken breasts to the other drawer. If you have a single drawer air fryer, use tongs to push the potatoes to one side and place the chicken breasts next to them, with space between them. Air fry the chicken and potatoes for 15-16 minutes at 380F (flipping the chicken after 10 minutes with tongs), or until the chicken has an internal temperature of 165F at its deepest point using a meat thermometer.
- Let the chicken rest for 5-10 minutes, then enjoy your dinner!
