Much like my blueberry smoothie without banana and my apple and pear smoothie, this rhubarb blueberry smoothie makes the most of sweet fruit, but without banana or yogurt. It's deliciously sweet, tart and perfect as a spring smoothie when rhubarb is in season!
My rhubarb smoothie recipe can be blended up in just a few minutes and, if like me you have a rhubarb plant in your back yard, you can make it all spring and summer long! We add blueberries to offset the tartness of the rhubarb for the best sweet treat.

⭐ Why this recipe is so good
Seasonal sweet treat. Rhubarb comes into season in late spring, and has the best sweet and tart taste. Grow your own like me if you like, it's so easy!
Balance of flavors. Many rhubarb smoothie recipes combine tart rhubarb with strawberries for sweetness. We swap strawberries for blueberries to keep this a lower histamine recipe (note that rhubarb scores 1 on SIGHI).
Quick and easy. All you need is a high powered blender, and no other fancy kitchen equipment.

Some notes on a few of them:
- Rhubarb - pick fresh unbruised produce, discarding the leaves (definitely don't eat these as they can make you very unwell) and dicing the raw pink stems.
- Blueberries - I highly suggest using frozen berries to get a thick and creamy smoothie.
- Chia seeds - use whole chia seeds rather than milled chia seeds, which can go a little gloopy.
- Plant milk - use the type of non-dairy milk that works best for you.

Step 1: Combine ingredients
Add diced rhubarb stems, frozen blueberries, plant milk, chia seeds and maple syrup in a blender cup (image 1).
Step 2: Blend the smoothie!
Blend the rhubarb smoothie, adjusting with more milk to preference or ice (image 2).
💭 Recipe tips and notes
- If you are using home-grown rhubarb, it's best to harvest rhubarb when it's about ten inches long (Gardening Know How).
- Use frozen blueberries rather than fresh, as this will give you a thick creamy smoothie.
- If you are using both frozen rhubarb and frozen blueberries you may need to use a little more plant milk so it isn't overly thick.
- A high powdered blender is best for making smoothies.

- 1 cup rhubarb fresh diced rhubarb, or thawed frozen rhubarb
- 1.5 cups frozen blueberries
- 1 teaspoon chia seeds
- 1 teaspoon maple syrup
- 1 cup plant milk
Instructions
- Add the diced rhubarb, frozen blueberries, plant milk, chia seeds and maple syrup to a blender.
- Blend the smoothie, then adjust with more milk to thin (if you wish) or ice to taste.
