🍔 Ingredients
All the ingredients and their quantities are set out in the recipe card below.
Some notes on a few of them:
- Turkey - you want to use ground turkey for this recipe, also known as turkey mince.
- Onion and celery - be sure to mince or very finely dice so that you have a little crunch, but not too much.
- Garlic - I suggest using garlic powder, and of course add a pinch more if you're a garlic lover!
📖 Swaps and variations
Swap the herbs. You can choose those you like the best, including dried parsley or basil.
Swap panko for gluten free breadcrumbs. For a gluten free turkey burger use suitable breadcrumbs instead.
Use burger buns or lettuce wraps. For a lower carb option you can use lettuce wraps.
🔪 Step by step instructions
All the instructions are in the recipe card below, but these photos should help guide you.
Making these air fryer turkey burgers is very simple, with just a few steps.
Step 1
Prepare the turkey burger patties. Add all the ingredients to a large bowl and use your hands or spoon to combine. Be sure to mix well to distribute the egg, panko and herbs evenly through the ground turkey (image 1 & 2).
Step 2
Prepare the patties. Divide the turkey burger mixture into either three larger patties or four smaller patties (image 3).
Step 3
Air fry the turkey burgers. After preheating the air fryer and spraying the basket with olive oil spray, place the burger patties in the basket with space between them (image 4).
Air fry for 10-15 minutes, flipping halfway through. Cook time will vary depending upon the thickness of the patties and how hot your air fryer runs.
Be sure to check for an internal temperature of 165F at their deepest point. Air fry for longer, if required.
💭 Recipe tips and notes
- Be sure to combine the ingredients so the egg, panko breadcrumbs and herbs are distributed evenly through the patties.
- Don't overwork the turkey burger ingredients when forming patties as this can result in overly tough burgers.
- Use tongs to (carefully!) flip the burgers - they will be very hot so don't use fingers!
- Adjust the amount of herbs and spice to taste preference.
- For a lower carb dinner, I suggest using lettuce wraps rather than buns.
- My low histamine readers may prefer to grind their own turkey. This tutorial on grinding your own meat is helpful.

On the turkey burger recipe, I can’t have eggs. What would you suggest in place of it?
Claire says
I've only tried it with egg yolk, but a flax egg may work well!
