It's a hearty creamy mascarpone pasta with chicken that works so well as a weeknight meal for all the family. No need to switch the oven on, it comes together so easily on the stovetop using affordable ingredients. So let me show you how to make this cheesy chicken pasta in all simple recipe steps!

Simple flavorful ingredients. We use easy to find fresh ingredients and pantry staples to make this creamy pasta sauce.
Family friendly. I know both kids and adults in my family won't turn down a comfort food pasta dinner!

Some notes on a few of them:
- Chicken - I suggest to use boneless skinless chicken breast for this pasta dish, dicing it into bite-size pieces about an inch thick in size.
- Mascarpone - not just for desserts, we use this rich Italian cheese to make the creamy pasta sauce. It's thick, creamy and has a hint of sweetness.
- Pasta - this recipe is quite forgiving, so you can use a long pasta such as spaghetti or linguine or short pasta such as fusilli or penne.
- Herbs - I like to use rosemary and thyme, but a small amount of sage (not too much, it's quite pungent!) is also delicious.
🔪 Step by step instructions
It's very easy to make this mascarpone chicken pasta on the stovetop with simple ingredients for a weeknight dinner. I suggest to dice all your veggies and herbs before you start to cook.
All the instructions are in the recipe card below, but these step by step photos should help guide you.
Step 1: Cook the pasta and chicken
Cook your pasta in salted water according to package instructions, scooping out about ½ cup of the pasta water.
While the pasta is cooking, drizzle olive oil in your skillet and cook the chicken pieces until browned and almost cooked through. Set aside on a plate.
Step 2: Cook the onion and garlic
If the skillet seems dry, add a touch more olive oil (don't clean the pan, the chicken bits will add flavor to the sauce). Cook the diced onion for 3-4 minutes at a low to medium heat until translucent, add in the minced garlic and diced asparagus. Pour in the chicken broth and increase the heat so it is lightly bubbling, but not at a hard boil. Cook for 3-4 minutes to reduce. Use a spatula to scrape up any brown bits on the bottom of the skillet for extra flavor!
Step 3: Make the mascarpone sauce
Stir in the mascarpone cheese so that it melts into the chicken broth. Add the finely diced rosemary and cook for 4-5 minutes on a low heat.
Step 4: Add the pasta and chicken
Add the chicken pieces back to the skillet, along with the thyme leaves. Pour in ¼ cup of reserved pasta water, stir well, then tip in the cooked pasta. Add more of the pasta water until the sauce is of the consistency you like. Season well with salt and black pepper (if using).
💭 Recipe tips and notes
- If you love a lot of the creamy mascarpone pasta sauce, simply use a little more cheese and broth.
- Don't forget to reserve the pasta water! It's vital to make the pasta sauce.
- Dice the chicken into small bite-size pieces and be sure they reach an internal temperature of 165F using a meat thermometer at their deepest point.
- For a gluten free dinner, simply use a gluten free pasta such as brown rice pasta or quinoa pasta (if they work for you).

If you love a lot of the creamy mascarpone sauce simply add more of the cheese and broth.
It can be used in both sweet cooking, such as my mascarpone cheese dip, as well as savory meals.
I don't recommend to freeze the pasta as it doesn't reheat too well and goes a little gummy.

Chicken Mascarpone Pasta
Ingredients
- 8 ounces pasta
- 2 tablespoon olive oil divided
- 2 large boneless skinless chicken breasts diced into small bite-size pieces
- pinch salt
- pinch black pepper optional
- ½ onion diced
- 2 garlic cloves minced
- 4 asparagus stems woody end removed, diced
- 1 cup chicken broth
- ⅓ cup mascarpone
- ½ teaspoon rosemary fresh leaves, picked, finely diced
- 1 teaspoon thyme leaves fresh leaves
Instructions
- Cook your pasta to the package instructions in a large pot of well salted water. Scoop out about half a cup of the pasta water and set aside to make the sauce.
- Dice the chicken into small pieces and season with salt and black pepper (if using).
- Drizzle olive oil into your skillet and cook the chicken pieces on a medium to high heat so they are nicely browned and almost cooked through. Use tongs to remove from the pan and set aside.
- If the skillet seems dry, add a drizzle more olive oil (no need to clean the pan). Cook the diced onion for 3-4 minutes until translucent. Add in the minced garlic and asparagus. Stir well, then pour in the chicken broth. Bring the heat up so it is lightly bubbling, and cook for a few minutes to reduce. Use a spatula to scrape up the brown bits from the bottom of the skillet.
- Stir in the mascarpone and rosemary, so the cheese melts into the broth. Add the chicken pieces back to the skillet, along with the thyme leaves. Pour in about ¼ cup of the reserved pasta water, stir well, then tip in the cooked pasta. Add more pasta water to preference, so you have a sauce consistency you like. Season with more salt and black pepper to taste, and spoon into your serving bowls.
Notes
- We all like a different amount of sauce for our pasta dishes. If you love a very creamy mascarpone pasta sauce, you can easily use half a cup (or more!) of the cheese and for a thinner sauce, add a little more chicken broth.
- Don't forget to reserve the pasta water to make the sauce.
- Make sure the chicken is cooked through and has a reading of 165F at its deepest point using a meat thermometer.
