Lamb's Lettuce Salad

This simple lamb's lettuce salad combines leafy greens, crunchy cucumbers, radishes, and a fragrant dill dressing. It's so easy to make in 10 minutes (or less!) as a fresh side salad for hot or cold dishes!

Lamb's lettuce (sometimes known as corn salad or mache) is deliciously soft, tender and a fun leafy green to pair with meats, fish or plant-based mains. It's one of my favorite salad leaves as it has a mild nutty, slightly tangy and earthy flavor.

It's also a go-to salad leaf for me as it's a lower histamine lettuce (per the SIGHI list) and makes such a good swap for higher histamine spinach.

🥬 Ingredients

All the ingredients and their quantities are set out in the recipe card below.

Some notes on a few of them:

  • Lamb's lettuce - the soft tender and mild lettuce with round leaves that you'll usually find in bags in stores.
  • Cucumber - I like to use mini cucumbers, but you could also use halved slices of Persian or English cucumber.
  • Radishes - for a nice peppery flavor!
  • Dill and mint - definitely use fresh herbs rather than dried for their fragrant flavor.

🔪 How to Make Lamb's Lettuce Salad

Making this leafy salad is very easy, uses simple ingredients and doesn't require any cook time!

All the instructions are in the recipe card below, but these step by step photos should help guide you.

Step 1: Make the dressing

Add extra virgin olive oil, apple cider vinegar, maple syrup, finely diced dill and mint and a pinch of salt to a bowl. Whisk to emulsify the dressing (image 1).

Step 2: Toss the salad

Place the lamb's lettuce in a large mixing bowl, along with the diced cucumbers, radishes and mint leaves. Pour over half the dressing, toss to coat the lettuce, taste test, then add more dressing to preference (image 2). Serve immediately as it doesn't keep too well.

💭 Recipe Tips and Notes

  • Dry the lettuce! On a recipe test I hadn't dried the lettuce well enough and it got soggy, which wasn't too pleasant. So give it a good dry before use.
  • Adjust the dressing. We all like different levels of 'zing' so adjust the oil to apple cider vinegar ratio to preference. White distilled vinegar can also be used (it scores 0 on the SIGHI list, but some low histamine readers may not be able to tolerate vinegar).
  • Add dressing to preference. This recipe makes a fair amount of dressing, so I suggest to add about half, toss the salad, then add more if you like.

📋 Frequently Asked Questions

Do I have to peel the cucumbers?

If you're using mini cucumbers, Persian or English cucumbers, then you don't have to peel them as they have thin edible skins. You can of course peel if you prefer though.

Is lamb's lettuce the same as corn salad?

Yes, lamb's lettuce is the same as corn salad. It's also called mache.

Can you store lamb's lettuce in the fridge?

I don't recommend trying to store lamb's lettuce salad. I've tried, just a for a few hours, and the leaves wilted and went soggy. So it's recommended to make the salad just before serving it.

Ingredients
 
 

  • 5 cups lamb's lettuce
  • 3 mini cucumbers sliced
  • 5 radishes sliced
  • 6 mint leaves

For the dressing

  • 1.5 tablespoon extra virgin olive oil
  • 1 tablespoon apple cider vinegar or white distilled vinegar
  • 1 teaspoon maple syrup
  • 2 tablespoon dill stems removed, finely diced
  • 1 tablespoon mint leaves stems removed, finely diced
  • pinch salt

Instructions
 

  • Combine the extra virgin olive oil, apple cider vinegar, maple syrup, finely diced dill and mint and salt to a bowl. Whisk to combine to emulsify the dressing.
  • Add the lamb's lettuce, diced cucumber, diced radish and mint leaves to a mixing bowl. Drizzle about half the dressing over the salad, toss to coat the lettuce and taste test. Add more dressing to preference, as we all like different amounts. Serve immediately.

Notes

  • Make sure the lamb's lettuce is dry before use, as it can go soggy very easily.
  • I suggest to make just before serving as the leaves wilt fairly quickly, and nobody likes a soggy salad!
