If you had asked me five years ago if I would have not one but two low histamine cookbooks, a breakfast ideas and sweet treats ebook, then I probably would have laughed. While I have always enjoyed cooking and being in the kitchen, putting together a mini cookbook seemed rather daunting. But then the low histamine recipes here on the blog got so popular so it felt like a fun project. So fun I've done it twice now!

Why make a low histamine cookbook?
When I first had to switch to a low histamine diet many years ago I was completely lost. It seemed so complicated, I couldn't eat some of my favourite foods and barely anyone had heard of the diet. To say I was cross about it all is an understatement! While there are some great blogs I like cookbooks, or ebooks, and there didn't seem too many about - so now I have had fun creating my own and I really hope they are helpful for people.
The breakfast recipe ebook came about a bit through boredom to be honest. It was lockdown here and I wanted a little project to focus on. And what better project than food?!
Breakfast is one of my favourite meals, but I do find I get a bit stuck in a rut at home, sticking to porridge in the winter and granola in the summer. So putting together an ebook was a chance to think outside the box. I was very pleasantly surprised that the sweet potato bowl was so tasty, and that adding some beetroot to a smoothie got some veggies in, but with lots of flavour.
I'm sure I don't need to give reasons why I did a low histamine sweet treats ebook! Who doesn't like a snack or dessert, at least now and again. It's also something I get asked a lot about on my Low Histamine Kitchen Instagram - what are good options for a sweet tooth?!
Low histamine breakfast recipes ebook
The low histamine breakfast recipes ebook has 12 recipes that are perfect for a healthy start to the day. There is a mix of hot dishes such as apricot and ginger porridge, kedgeree, blueberry baked oatmeal and sweet potato toast for those days when you need something warming.
And for hotter days, then the tahini chia pudding with blueberry jam is such a winner! There's also a fun smoothie, ginger breakfast cookies (although I don't blame you if you eat them any other time too!) and coconut granola, amongst others.
Low histamine sweet treats ebook
The low histamine sweet treats ebook has nine recipes, with seven new ones not on the blog. If you fancy a snack then why not try the tahini honey energy balls, mini blueberry cheesecakes or tiger nut cookies?
For a warming dessert there is a vegan blueberry and blackberry crisp and crumble topped baked apples - both are full of gooey fruity goodness that is especially nice on a colder day.
With summer coming (hopefully!), I also wanted to include some icy treats. There are three to choose from, with blueberry and pomegranate coconut popsicles (the kids will love these!), blackberry sorbet and mango 'nice cream', which is a personal favourite.
I hope they satisfy a sweet tooth and show you that low histamine treats are possible!
Ingredients
All ingredients in the low histamine recipes ebooks follow the SIGHI food compatibility list for histamine, using foods that score 0-1 on that list. Please remember that we are all different and have different sensitivities though, and you should always follow the advice of your doctor or dietician.
Behind the scenes
Making my low histamine cookbooks definitely wasn't that straightforward, and took up a lot of time and energy. It was also a lot of fun though, with a few recipe disasters for sure (the cheesecake crust that somehow turned into a souffle is probably the best - I wish I had pictures!).
Things I didn't anticipate in the process:
1. Waiting for a bright day to take photos as I don't use artificial light. Literally standing at the window waiting for a rain cloud to pass was a highlight . . .
2. Trying out a new ingredient - tiger nuts - and loving them! There are now several packets in my pantry to test out new recipes with.
3. The nightmares of editing photos - it takes sooooo long. The ones in the sweet treats ebook look much better I feel, thanks to a new camera and learning more about photo editing.
4. The cat sneaking up on me and nearly knocking over several jars of nuts and almost sticking his head in some maple syrup. So helpful pets, aren't they!
And the best bit? Getting to eat all the end results of the recipe testing of course!
