This recipe was inspired by, and adapted from, the Dove's Farm spelt wholemeal honey and cinnamon cookies, with ingredient swaps and substitutions to make it suitable for a low histamine diet. It's perfectly sweet, nutty and with the best crispness too!

🍪 Ingredients
We all love a few ingredients recipe don't we! This recipe for spelt cookies has only five, most of which are always in my pantry (ready to make cookies with, of course . . . ). You will need:
- Spelt flour: the basis of the cookie, giving it a little bit of a nutty taste. I have only tried these with the Dove's Farm organic wholegrain spelt flour but they should be great with other spelt flour too.
- Honey: for that perfect sweetness a cookie definitely has to have!
- Cardamom: for a hint of spice. The Simply Organic cardamom is good.
- Coconut oil: to bring the cookies together, it also gives a hint of coconut flavour.
- Baking powder: just a touch to help them rise.
🥣 Which spelt flour to use
I have only ever tried these cookies with the Dove's Farm wholegrain spelt flour, and it was one of their recipes that inspired these cookies. Spelt has a rich nutty flavour, and feels very 'fall' in my opinion.
For my low histamine friends, please note that spelt scores 0 on the SIGHI list, with a ? as a liberator. There is a note stating: 'Prefer old varieties. Modern ATI-varieties modified by cultivation are often not well tolerated'. Of course, only use if you are able to tolerate spelt.
🔪 Step by step instructions
These spelt cookies come together in less than half an hour, and are very simple to make.
Step 1
Sift your spelt flour through a fine mesh sieve into a large bowl. If you are left with any larger pieces in the sieve discard them as they can make the cookies too dry.
Step 2
Add the cardamom and baking powder to the bowl and stir to combine.
Step 3
Add in the melted coconut oil and honey. The honey needs to be runny honey, not a solid block. Simply heat for 20 seconds or so in the microwave to get it runny again. Stir very thoroughly so it combines into a sticky 'dough'.
Step 4
Spoon heaped tbsps of the cookie 'dough' onto your lined baking tray, making sure there is distance between the cookies to allow room for them to expand. Pat the dough into rough circles with your fingers. Bake for 10-12 minutes or until light golden brown.
Once removed from the oven, leave on the tray for 5-10 minutes. They will still be slightly soft and could come apart at this stage. Leave to cool and they will harden into cookies. Transfer to a wire rack to fully cool when you can handle them. Then enjoy!
💭 Recipe tips
- Stir very thoroughly when you pour in the honey and coconut oil so the flour is dissolved into the mixture.
- Keep the amount of 'batter' you spoon onto your baking tray to around a tbsp. Any more and they will spread too much (I know, it happened on one of my recipe tests and I ended up with cookies the size of small plates!).
- The cook time is fairly precise on this recipe, so keep an eye on the cookies after ten minutes. They should be light golden brown, with a hint of darker brown around the edges. Remove from the oven at that point.
- The cookies will still feel soft to the touch when you remove from the oven. Leave to cool for 5-10 minutes and they will harden. You can then transfer to a wire rack to further cool down.

- 1.5 cups spelt flour
- 1 teaspoon cardamom powder add more to taste preference
- ⅓ cup honey
- 6 tablespoon coconut oil melted
- ½ teaspoon baking powder
Instructions
- Preheat the oven to 190C and line a baking tray with parchment paper.
- Sieve the spelt flour into a large bowl, discarding any larger pieces of bran that are left in the sieve. Add the cardamom and baking powder, and stir into the flour.
- Pour in the melted coconut oil and honey. Stir so the mixture combines. It will be quite sticky from the honey.
- Place around a tablespoon of cookie 'dough' onto the baking tray, and repeat so you have around 8 cookies. Space them out as the cookies will slightly expand in size.
- Bake for 10-12 minutes until light golden brown. Watch them carefully for any signs of burning as they turn fast! Remove from the oven and leave on the tray until they harden (they will still be soft when you remove from the oven). Then transfer to a wire rack to cool. Enjoy!
